I really like savory high protein breakfasts. The protein is important for jump starting the metabolism. Plus, things like smoothies, cereal or fruit, although quick and easy, to me, just don’t cut it. The best breakfasts are warm, vegetable-filled and maybe even a bit spicy. That’s why, during the week, I like to try and have some pre-made deliciousness ready to microwave. Two of my favorite savory vegan make-ahead breakfasts are:
Black Bean Tofu Scramble
This recipe has a Mexican flair and is good with a little spicy heat. I serve it with a variety of toppings, the standards like avocado, spinach, cilantro, tomatoes, onions, salsa, vegan sour cream, etc. You can serve it on a tortilla as well, but we like that Flax-seed Flat-out bread. Flax is good for you and they are tortilla-like, so it makes it a healthier tortilla substitute.

Egg-Free Asparagus Frittata
Since going vegan, I have missed Frittata 5s and quiches, so I’ve searched for recipes to fill the gap. After some experimentation, I came up with this version. If you over bake it, it get’s too dry though, so I recommend sticking to the 20 minute backing time. You can also substitute other veggies if you prefer, but asparagus is a classic for me. I usually serve it greens and a light vinaigrette.

Once each dish is prepared, I just divide them up into handy dandy storage containers perfectly sized for one serving per person. After they’re packaged up neatly, it’s into the fridge and they’re all ready for consumption during the week.
